Camping Kitchen

The kids and I have managed to get in 7 camping trips this year and Daddy Ladybug has been able to join us for 2 trips with our extended family. I've had lots of practice setting up/taking down camp by myself and figuring out what is the most efficient way to camp with my kids. I'm getting better every time. It is not easy camping alone with kids, but we have so much fun...only once did I seriously consider packing them up in the middle of the night to go home! It's only mid-August and there's several weeks left in the camping season, but I think I might be done for the year, I'm kinda burnt out! Ready for the scheduled life of the fall to return, anyone else feeling that way?? 

I get asked a lot what my kitchen looks like when I'm camping, so here's a post with pictures and organizational ideas that I use when camping to keep my family fed!


The typical camp set up at a BC Provincial Park (this is Cultus Lake). 

They generally have a BBQ attachment to the table so I use that as my starting point and build from there. BBQ or stove go on the metal extension and the folding table (from Costco) goes beside it. The big rock at the end of the table is almost always there, so I use that as a boundary for the kids..."don't go past, it's hot!" I usually bring a bucket for a garbage can, but I forgot it this trip so I improvised with a garbage bag tucked under the stove. The shelter tent usually depends on the weather...over the table if it's rainy or further back if it's dry as a play hide-out from the mosquitoes! 


The kitchen drawers go under the table and the washing bins/draining rack go on top. 

This year I'm trying a new camping organizational strategy, instead of 3 bins, I'm now down to 1 (which holds the bigger stuff like the washing bins) and 2 sets of drawers...one for the clothes and toiletries and one for the kitchen. I've fallen in love with my camping kitchen drawers. No more digging through bins to find things, it feels so organized! This has also reduced the amount of space my camping gear takes up in my vehicle. The best thing about the drawers is they can serve as a side table for the late night glass of wine at the campfire when the kids go to bed.


Inside the kitchen drawers... Cutlery/cooking utensils.


Lighter, clothes line, dish towels/cloths, other random tools & small first aid kit.


Smaller dishes - bigger ones are in a bin.


Nesting pots and wrapped up in hand towels is my french press (very important when your children wake up with the birds...)


Water and iced tea jugs (frozen before I go to use as ice for the cooler) sit on the table for easy access. I try to encourage everyone to have lots of fluids when it's hot.

There you have it, my camping kitchen. 

I create a lot of things here, but it's pretty much a consistent diet of hot dogs, mac & cheese, and s'mores when it's just me and the kids, but occasionally I break out the fancy stuff (and they complain the whole time)!

Greek Hobo Pack (Foil Dinners)

Camping season is in full swing and we've just returned from a week-long camping trip with extended family. I didn't do much cooking on this trip (thanks nana ladybug!) so I don't have much to show for my week as far as food goes, but the weather is still really hot here at home and cooking inside is pretty much out of the question, so it was back to BBQ dinners. Here's the absolutely delicious creation I came up with tonight!


Greek Hobo Packs

(per person/pack)

1 Chicken Breast
1/4 cup Zucchini
3 Button Mushrooms, quartered
1/2 cup Red Pepper
3 small Red Potatoes, cubed
1 clove Garlic
3 Tbsp Onion, cubed
3 Tbsp Feta Cheese, cubed
1 slice Lemon
1 Sprig Rosemary

Combine ingredients in aluminum foil and wrap tightly. Cook on fire or BBQ (medium heat) for 20-30 minutes until chicken is cooked and potatoes are tender. Let sit for 5 minutes before opening packet (be careful for the steam!). 

Yum Yum Yum. 
I think I might make that again tomorrow!

Giardiniera (Marinated Salad)

Picnic season is here, time for something perfect for a day at the park.

Giardiniera is basically Italian style marinated vegetables, a great summer condiment/salad for a picnic or antipasto platter, it can be spicy or sweet, and easy to play with the ingredients if you don't like something. This is not a quick recipe, it takes about 2 days to make it, but it's super easy and worth the time to make your own.


Giardiniera

1/2 head Cauliflower, chopped into small florets
1/2 head Broccoli , chopped into small florets
2 ribs Celery, chopped
3 Carrots, sliced diagonally
2 yellow Peppers, large diced
0-6 Serrano peppers, sliced (optional, depending on desired heat)
1/2 cup Salt
3 cups Water (more if needed)
3 cloves Garlic, minced
2 1/2 tsp Italian Seasoning
1/2 tsp Red Pepper Flakes
1/2 tsp Celery Seeds
1 Tbsp Sugar (optional)
1 cup Vinegar
1 cup Oil (I used Canola Oil)
2 Roasted Red Peppers, cut in large strips
10 baby Pickled Pepperoncinis, whole

First, combine the cauliflower, broccoli, celery, carrots, and peppers together in a large bowl. Pour salt over the veggies and add water (enough to cover the veggies). Mix well and cover with plastic wrap. Refrigerate overnight.

In the morning, pour the veggies into a strainer and rinse well with water to get rid of any excess salt. Pour veggies back into a bowl and add remaining ingredients. Mix well. Cover bowl again with plastic wrap (or pour into a large jar to keep in the fridge) and let marinade for at least 24 hours before serving. 

Great on an antipasto platter, in a salad, or just as a side/salad on a summer picnic.

Rollkuchen & Watermelon

It's hot right now and who can resist fried dough and watermelon?! 

Rollkuchen is a traditional treat of fried dough served with watermelon slices. It's basically the Mennonite version of doughnuts. I was first introduced to Rollkuchen (and many other wonderful Mennonite dishes) from a dear friend and director at summer camp. She would make the staff these interesting dishes on our days off and when I married into a Mennonite family later in life, I learned to make them. We even have them when we're camping - Daddy Ladybug's family goes on a camping trip every summer to the Okanagan and each year we make Rollkuchen for a crowd of about 30 people (no small task). 


Rollkuchen

Watermelon
Oil for frying (I used vegetable oil)
3 cups Flour
1 tsp Salt
2 Eggs
1/2 cup Sour Cream
1/2 cup Milk
~1/2 cup Flour for kneading

Heat oil to 375F. I used an electric frying pan with about 3" of oil. 
Mix dry ingredients in a bowl. In a separate bowl, mix wet ingredients and add to dry. Mix well and add additional flour to knead to a soft dough that isn't sticky. Roll out about 1/4" thick and cut into long rectangles (about 4"x2"). Cut a slit in the middle and pull one side through the slit to make the twisty effect shown in the picture. 

Fry in oil until golden brown on both sides (turn once). Drain on paper towel and serve with delicious watermelon slices and your choice of toppings (some family favourites include: white sugar, powdered sugar, rogers golden syrup, pancake syrup, jam, honey).

Hobo Hash

Hobo Hash

2 Yellow Baby Potatoes
3-4 sausage links
2 Eggs, mixed well
2 Tbsp Milk
1 slice Tomato, diced
1 slice Onion
1 Tbsp Butter
Salt, Pepper, seasonings as desired

Pre-fry sausage and potatoes if desired (to keep eggs from being overdone). Combine all ingredients in aluminum foil and top with butter and seasoning. Wrap tightly in foil and cook for 10 minutes on a BBQ or on hot coals in a campfire.

Perfect hearty camping breakfast.

Thai Fe Salad

Ok, you know those Santa Fe salads, well I planned to make one tonight for dinner, but was missing a few ingredients for the dressing, so thought I'd experiment with a little fusion...and voila, thai peanut dressing on a santa fe salad tastes FABULOUS! 


Thai Fe Salad

2 cups Corn (cooked from frozen or canned)
1 can Black Beans
2 Tomatoes, diced
1 Avocado, diced
1 Red Pepper, diced
3 Tbsp Red Onion, diced
3 Tbsp Cilantro, chopped

Dressing:
1/4 cup Chunky Peanut Butter
1/4 cup Lime Juice
1/4 cup Oil
2 Tbsp Sweet Thai Chili Sauce
1 clove Garlic, minced
1 Tbsp Sugar
1 tsp Soy Sauce
1/2 tsp Salt

Combine dressing ingredients well and let flavours blend while mixing the salad ingredients. Combine salad ingredients and top with dressing. Mix well and cool before serving.

This is a great salad for camping, ingredients are either fresh or canned and if you bring the dressing along it's a quick meal with some grilled chicken.

Bannock

It's Canada Day today.  Happy Canada Day! 

Many people have extended the weekend or have started their summer vacation, it's pretty deserted around here! They're out enjoying their cabins and campgrounds - we seem to stay home on long weekends and go camping during the week when it's a little quieter, so we're at home enjoying the heat! 

This fabulous day calls for a great campfire dish.

I'm originally from a largely First Nations community and growing up, one of the staples was Bannock, a basic bread that is perfect for camping. It can be fried in fat/oil, baked in the oven, or cooked over fire.

Bannock fried in oil


Bannock

2 cups Flour
1/2 tsp Salt
2 tsp Baking Powder
1 Tbsp Sugar
1/4 cup Powdered Milk
*Add 1 cup Water when making

Mix all the dry ingredients together in a plastic resealable bag and you've got a great bread option when camping. All you have to do is add the water, mix well and fry in a couple Tbsp of oil or fat or roast on a stick over an open flame. Top with Jam, peanut butter, cheese, butter, honey, or your favourite bread topping for a delicious easy camping bread . 

One of our favourite was to eat Bannock is to make Bannock Dogs - Bannock wrapped around a wiener and roasted on a stick over the campfire. We dip it in mustard or ketchup for a tasty campfire treat.

Cajun Hobo Packets (Foil Dinners)


Some of the most tasty camping meals I've had are Hobo Packets or Foil Dinners - all the ingredients deliciously roasted in foil. Not only is it really good, it's easy to make individual servings and simple to clean up, making it a great meal for camping.

I've been trying to make different combinations and this has to be my favourite so far!

Cajun Hobo Packs (per person)

1 Corn on the Cob
3-4 Baby Red Potatoes, halved
Onion Wedge (about 1/4) 
1-2 cloves Garlic
1-2 Sausages (any savory ones you like), cut in 1/2
Old Bay Seasoning
1 Tbsp Butter

Spray one side of a sheet of aluminum foil with cooking spray. Add ingredients in the centre and top with seasoning and butter. Fold edges together and seal the packet to keep the steam and juices in. Use a second sheet to wrap tightly over the packet if using open coals. Place on BBQ or coals for 10-20 minutes (depending on the heat of the flame and the size of the packet). Remove from heat. Poke a fork in to let out steam and let the packet sit for 5 minutes before opening. Unwrap and enjoy!

Pancake Mix

Pancake mix is a great way to save some time or prepare food for camping or larger gatherings. Lady and Bug love pancakes and I make them at least one day a week, so I've started making a mix in large quantities to speed up the process. It's also a huge help when we go camping, just have to take along a few wet ingredients and we have a quick and delicious breakfast.


Pancake Mix

8 cups Flour
1/2 cup Sugar
1/3 cup Baking Powder
2 tsp Salt
3 1/3 cups Powdered Milk


To make Pancakes for 4-6 people (about 16 pancakes):

 2 cups Water
2 Eggs, beaten
1/4 cup Cooking Oil
2.5 cups Pancake Mix

In a bowl, mix water, eggs and oil. Add to pancake mix and stir until moistened, but still lumpy. Add additional water to thin batter as necessary.

Heat and grease a griddle or skillet. Pour about 1/4 cup batter onto the hot, greased pan and cook on medium heat for about 2 minutes on each side. Serve with butter and syrup or berries as desired.


For camping I store my pancake mix in a plastic sealable bag and write the instructions on it.

Now I'm ready for our next camping trip and Saturday morning!

I'm so tired of buying instant oatmeal and using 2-3 packs per person just to make a meal, plus, I really like to know what's in things I serve. So I'm making my own and thought I'd share for anyone else who's tired of going through an entire box of instant oatmeal in 1 sitting.

Slow Cooker Baked Potatoes




I seem to always want a baked potato with my steak, but we only have steak when it's nice outside. Unfortunately, I hate heating my house up with the oven to bake them and putting them on the grill for so long seems ridiculous to me, so I have started to make my baked potatoes in the slow cooker. 

I know, not an original idea, but I just discovered this concept! They are perfectly done, without heating up the house and ready to either stuff with delicious goodness for twice baked potatoes or serve with our steaks. A great use for that slow cooker in the summer!

10 Great Meals for Camping with Kids


It's officially the kick off to the camping season this year. The line of campers impatiently waiting to escape the city is growing with each hour, so if you're caught in traffic, here's something for you! 

Camping food seems to get a free pass when it comes to nutrition, it's fun, tasty and easy. In my experience, you can get kids to eat more if they help make it, so this is a great chance for them to be involved. The best part is that there's usually little work involved for the cook! A fire, a stick, a grill, and some tin foil are about all you'll need!

If you're not out camping, your backyard BBQ works just fine.

I've put together some ideas that I remember from my childhood, years of working at summer camp, and things I've tried as an adult (but wish my parents knew about it when I was a kid).




Eggs in a Bag

1 small zipper freezer bag
Boiling water & pot with lid
2 eggs per person
omelette toppings (cheese, tomatoes, onions, mushrooms)
salt & pepper

Add 2 eggs and desired toppings to a zippered freezer bag (not sandwich - too thin). Close baggie and place in boiling water and cover for 8-12 minutes, depending on how you like your eggs. Season with salt & pepper as desired and pour out of baggie onto a plate or eat right out of the bag.

A quick and easy breakfast.






Pancakes
1 cup Flour
1 Tbsp Sugar
2 tsp Baking Powder
1/4 tsp Salt

Combine this mix in a plastic zipper bag and take with you.
Add:
1 egg, beaten
1 cup Milk
2 Tbsp Oil

Stir until moist but lumpy. Cook for 2 minutes/side on a hot griddle or skillet.

Serve with Syrup, fresh berries or whip cream for a delicious breakfast!




Piggies in a Bannock Blanket

Make 1 Bannock Recipe (see below) and wrap Bannock around smoked link sausage or hot dog wieners. Using a stick or a grill over fire, cook until meat starts to bubble and dough becomes golden brown (and probably some black) and puffy. Meat should be cooked through.

Serve with Ketchup or Mustard as dipping sauce.



Walking Tacos
 nacho cheese or corn chips (individual bags)
cheese
chili or taco beef or refried beans
tomatoes & lettuce
sour cream, salsa & guacamole

Before opening crush the chips a bit & cut off the top part of the bag. 

Top with meat, cheese and any other toppings you'd like and use a fork or fingers to eat!




Bannock Mix

1 Tbsp Sugar
1/4 cup Powdered Milk
*Add 1 cup Water when making

Baked Potato  
Poke holes with a fork in a baking potato (russet is great). Wrap in foil and place over hot coals for 30-50 minutes (depending on size).

Let sit for 5 minutes and serve with bacon bits, tomato, green onions, cheese, chili, sour cream, butter, mustard...anything you want!




Hobo Packets
Combine your favourite ingredients in a double layer of aluminum foil (don't forget to use cooking spray) and cook over hot coals for 20-40 minutes (depending on the size and ingredients).

Let rest for 10 minutes before serving.

Traditional Hobo Packets include meat, potatoes, onion, carrots, butter & salt/pepper.
Be creative and use ingredient like ground beef patties, steak, chicken, sausage, carrots, potatoes, onions, tomatoes, mushrooms, zucchini, bacon bits, eggs, peas, broccoli, cheese, pineapple, mango, lemons, limes and any seasoning or sauces you'd like!





Campfire Mac & Cheese

1/ 2 cup Partially cooked macaroni
1 tsp butter
1 Tbsp Milk
1/4 cup Cheese, grated

Combine ingredients in an individual foil pie plate and mix well. Cover with a double layer of foil and cook over hot coals for 10 minutes. Stir well and let sit for 5 minutes before serving.




Pina Colada Banana Boats

Cut a V in the top of a ripe banana and scoop our some of the flesh. Line the V with marshmallows and top with crushed pineapple, coconut flakes and dark chocolate chips.

Wrap in aluminum foil and cook over hot coals for 10-15 minutes until marshmallows are melted.

Eat with a spoon.




Nutella S'mores

Graham Crackers
Jumbo Marshmallows
Nutella

Spread nutella on two graham crackers. Toast marshmallows over fire with a stick until golden and melty. Sandwich melty marshmallow between nutella'd graham crackers and serve warm.

Watch out for the  gooey deliciousness that squeezes out the sides!

Camping Spices

Camping season is getting close! I'm just itching to go, so it's on to planning and trying new ideas to see what will work for us this year. The camping bins have been re-organized and the packing list is in the process of an update. 

My kids are a year older now and some of the things we couldn't do last year are now possible with the development of some basic (and I mean basic) listening skills and reasoning abilities! I can't wait for the first planned trip of the year in June. Maybe I'll be spontaneous if there's a nice week before then.

Anyway, enough babble about camping...my northern and eastern Canadian friends are tuning out as they are still dreaming of seeing the grass poke out of the snow, I'm sure camping seems like a pipe dream at this point! Sorry!

Here's something I've been working on to reduce the amount of things I have to take with me.

Camping Spices


 I've emptied a Wilton Sprinkles container and re-filled each section with a different spice. It's not terribly easy to get the spices in - it required a very small funnel (or you could use a small piece of paper rolled into a tube instead), but the end result is fabulous. There's just enough spices in one section for a week camping, which is probably the longest we would go at any one time.


I have two, the first one I made with mixed spices (shown) like greek, taco, italian, Old Bay, garlic powder & BBQ seasoning, and one with regular spices/herbs like seasoning salt, oregano, basil, onion powder, parsley & thyme. I think I might make one more for the other spices that I don't use quite as often, but are nice to have around: cumin, paprika, cayenne, rosemary, dill, and chili. Just gotta make few more cupcakes to use up those sprinkles.



These containers are great for spices because they pour nicely to fill a measuring spoon or sprinkle seasoning if you do it carefully.

So there's another camping trick from my bin, hope it works for you too!

Cheeseburger Macaroni

Daddy Ladybug love Hamburger Helper, but I like to make things from scratch as much as possible, so it's forbidden in our house. Here's my version of a great easy meal that everyone will love.


Cheeseburger Macaroni

2 lb Ground Beef
1 cup Onions, diced
2 cloves Garlic, minced
4 cups Milk
1 cup Water
4 cups Elbow Macaroni (uncooked)
2 Tbsp Sugar
2 tsp Seasoning Salt
1 & 1/2 tsp Oregano
1 & 1/2 tsp Parsley
1 & 1/2 tsp Garlic Powder
2 tsp Paprika
1/2 tsp Black Pepper
1 Tbsp Beef Oxo (broth seasoning)
2 cups Valveeta Cheese, cubed (or shredded cheddar cheese if you want to be healthy!)

Brown meat. Add onions and cook until tender, add garlic for 30 seconds. Add milk, water, macaroni, sugar and seasonings. Stir well and bring to a boil. Reduce heat, cover, and simmer for 8-10 minutes until macaroni is tender, but not overcooked. Remove from heat and stir in cheese. Cover and let sit for 5-10 minutes before serving to allow the liquid to absorb.

This is a large recipe, makes about 8 generous portions and you might even have left overs for lunch too!

Don't buy Hamburger Helper - make this delicious easy meal instead.

Easy Sweet & Sticky BBQ Ribs

Ribs can be a lot of work and my life isn't really conducive to work intensive meals, so I've started making ribs the easy way. I'll admit, the slow grilled version is amazing, but when I need a quick meal and want ribs - this is the ticket!


Easy Sweet & Sticky BBQ Ribs

3 sides of ribs (pork or beef)
1 Bottle Beer
1 Onion, quartered
4 clove Garlic
Salt & Pepper (to taste)
1 bottle of your favourite BBQ sauce (Bulls Eye Guinness)
1 & 1/2 cups Apricot Jam
1/2 cup Brown Sugar
1 Tbsp Hot Sauce 

Cut ribs into smaller pieces (2-3 rib sections). Add to a large stock pot with beer and enough water to cover ribs. Boil for 30-40 minutes until meat is tender and falling off the bone. 

In a separate bowl, combine BBQ sauce, apricot jam, brown sugar, and hot sauce. Spread over cooked ribs, cover, and let marinade for 20 minutes. Pre-heat grill to medium high heat. Grill sauced ribs for about 5 minutes on each side until the sauce is nicely caramelized.

Serve with Grilled Asparagus and Dillytard Potato Salad for a fantastic BBQ meal. 

Camping option: pre-boil the ribs and bring the sauce - a great addition to any camping menu.

Camping Menu 2013

School's out for the summer and it's Canada Day on Monday. That means today is the launch of the official camping season!

In honour of this momentous day, I though I'd share my camping menu with you! This year I have a 4 day camping menu. We usually only go camping for 2-3 days, but I've added an extra day in case it's a long weekend (like this weekend!).

Cooler Tips: I try to bring as much canned or frozen food as possible to reduce the amount of ice I need to pack into my cooler. Milk jugs filled with water and frozen make great cooler packs and give you some nice cold clean drinking water too. Keep a refrigerator thermometer in your cooler and if the temperature rises, get some more ice!

2013 Camping Menu



Day 1 (Friday)
Travel Snack - Ladybug's Trail Mix
Evening Snack - S'mores

Friday Notes: Pre-make trail mix and store in ziploc bags for the drive to the campground. Help make dinner easier by marinading chicken at home and storing in a ziploc bag. Cut up greek salad and prepare dressing (don't add dressing until you start making dinner) and pre-make Naan (wrap in aluminium foil).


Day 2 (Saturday)
Breakfast - Pancakes & Strawberries
Lunch -  Chicken Quesadillas
Afternoon Snack - Watermelon
Evening Snack - Banana Boats

Saturday Notes: prepare pancake mix ahead of time for a quick hot breakfast. Use left over chicken for quesadillas. pre-cook, marinade, and freeze ribs. Pre-make potato salad without eggs & use a small unopened jar of mayonnaise (added when serving) as it doesn't have to be refrigerated to reduce the risk of food poisoning.


Day 3 (Sunday)
Lunch - Taco Soup
Afternoon Snack - Oranges
Supper - Low Country Shrimp Boil & Leafy Greens Salad
Evening Snack - Orange Brownies

Sunday Notes: Bring oatmeal pre-baked and reheat before serving. Taco soup can be pre-made & frozen or bring frozen ground beef and canned ingredients. Use frozen shrimp & sausage for low country boil.


Day 4 (Monday)
