Camping Menu 2014

It's July 4th, making this a long weekend for my neighbours to the south! I thought I'd share my 2014 Camping Menu to celebrate another fabulous camping weekend!

Freezer Meals: Big Cook Spring 2014 (Pantry Edition)


Spring is here, the trees are starting to bloom - it's my favorite time of year! 

Unfortunately the freezer is empty again and money is tight this month, so I wasn't able to make some of my usual freezer meals for my big cook - instead, I decided to do a Big Cook Day from the things I had in my pantry. 


Thanks to my bursting pantry and the freezer full of grass fed beef we bought in the fall, the only thing I still had to buy for this Big Cook Day was chicken (great sales on chicken breasts & thighs at my local store and it was 10% off on Tuesday!!!) and I couldn't resist a couple bags of shredded Swiss cheese from the 50% off bin to make one of my fav's. I only had my usual grocery budget to make this happen so we won't be buying much else this week...some milk & eggs and veggies from the market to round out our meals - but I'm gonna be so thankful for all this work when I don't have to do anything to prepare meals for the next few months. 

Pantry Big Cooks area great way to use up some of the stash that seems to accumulate in the pantry and freezer!


Once again, I wasn't free to just cook to my heart's content, so I had to split up the day into two parts; chicken in the morning and beef in the afternoon/evening. After dropping the kids off at Preschool, I had to do a quick shop to pick up chicken because it was 10% off Tuesday and I can't resist that wonderful savings on chicken that was already almost 1/2 price!

I started with a huge batch of a staple that I would need in several recipes, Home Made Cream of Mushroom Soup (Condensed) (x3), so I could make some classic pantry meals without the canned mushroom soup - 2 recipes for the meals I was making and one for the freezer.


Once that was done, it was on to Creamy Swiss Chicken (x2).

Then on to the easy dump & pour recipes (so easy, I could do this all day!):

Slow Cooker Honey Garlic Chicken (x3), Greek Chicken (x3), Bacon Maple Dijon Chicken (x2), and Slow Cooker Teriyaki Chicken (x3).



A little break to go pick up the kids from Preschool and it was on to lunch. Ladybug Soup (x2) was on the menu and I made a double batch with one for the freezer.


Ms. Ladybug was with us for the afternoon & early evening, so I was a little busy and distracted, but still managed to quickly whip up a family favorite, Slow Cooker Amtat Mongolian Beef (x4), for dinner (with 3 extras for the freezer) and Slow Cooker Beef Stroganoff (x3) while it was cooking.


After Ms. Ladybug went home and Uncle Ladybug & the kids were in bed, I managed to make Herbed Meatballs. Half for Spicy Apricot Meatballs (x2), saving the other half for Slow Cooker Swedish Meatballs (x2).

Yup, that's 12 different meals - 29 meals in total. Whew, busy day, an empty pantry, and a very full freezer!

Camping Menu 2013

School's out for the summer and it's Canada Day on Monday. That means today is the launch of the official camping season!

In honour of this momentous day, I though I'd share my camping menu with you! This year I have a 4 day camping menu. We usually only go camping for 2-3 days, but I've added an extra day in case it's a long weekend (like this weekend!).

Cooler Tips: I try to bring as much canned or frozen food as possible to reduce the amount of ice I need to pack into my cooler. Milk jugs filled with water and frozen make great cooler packs and give you some nice cold clean drinking water too. Keep a refrigerator thermometer in your cooler and if the temperature rises, get some more ice!

2013 Camping Menu



Day 1 (Friday)
Travel Snack - Ladybug's Trail Mix
Evening Snack - S'mores

Friday Notes: Pre-make trail mix and store in ziploc bags for the drive to the campground. Help make dinner easier by marinading chicken at home and storing in a ziploc bag. Cut up greek salad and prepare dressing (don't add dressing until you start making dinner) and pre-make Naan (wrap in aluminium foil).


Day 2 (Saturday)
Breakfast - Pancakes & Strawberries
Lunch -  Chicken Quesadillas
Afternoon Snack - Watermelon
Evening Snack - Banana Boats

Saturday Notes: prepare pancake mix ahead of time for a quick hot breakfast. Use left over chicken for quesadillas. pre-cook, marinade, and freeze ribs. Pre-make potato salad without eggs & use a small unopened jar of mayonnaise (added when serving) as it doesn't have to be refrigerated to reduce the risk of food poisoning.


Day 3 (Sunday)
Lunch - Taco Soup
Afternoon Snack - Oranges
Supper - Low Country Shrimp Boil & Leafy Greens Salad
Evening Snack - Orange Brownies

Sunday Notes: Bring oatmeal pre-baked and reheat before serving. Taco soup can be pre-made & frozen or bring frozen ground beef and canned ingredients. Use frozen shrimp & sausage for low country boil.


Day 4 (Monday)
Breakfast - Breakfast Hash (left over fried potatoes, meat & veggies with a few eggs)
Lunch - use up any left over food (or have hotdogs!)
Driving Home Snack - Ladybug's Trail Mix

Pack all the spices you need in this handy little home-made spice container.

Death to the Pre-Dinner Stress: The Life-Saving Menu Planner


I try to keep my life as efficient and simple as possible. Time is precious to me and so over the years I've devised a menu planning system that works for me & my family's craziness.

A menu has been my life saver.

I'm sure most people can relate to staring at the inside of the fridge/cupboard when you're starving an hour past the usual dinner time, trying to figure out what to make. I sure know that feeling and it drove me insane.

When I went out to work, I found it extremely stressful to come home and try to figure out what to make. Now that I'm at home, it's just as hard, with two little ones hanging on my legs screaming that they're hungry and everyone else pecking around the kitchen like a bunch of chickens trying to find something to take away the hunger pangs.

Not any more!

I started with just one 4 week menu. I modelled it after the menus they had in the group home I used to work at - perfect for a revolving door of cooks and perfect for a busy house. There is a column for each day of the week and each day is broken down into three meals. I don't really use the breakfast or lunch spots like I should, but there are many days that I wish I did...one day I'll get there. Each meal includes the main dish and any sides to help keep a balanced & healthy meal.

I started using this menu about 3 years ago & it worked well at first, but over time I found that it was too much repetition. The same meal every 4th Monday became hard to deal with...so I tried a 6 week rotation. It worked better, but come summer we wanted lighter meals and BBQ. Last year I adjusted my meals a bit and created 4-week summer & winter menus. Of course I couldn't stop there, this year, I added fall & spring ones too!

Over the years I've added a few helpful things to my menus:
  • snacks/desserts to have available for the week (helpful for grocery shopping)
  • a list of the meals that can be done in a big cook (for quick reference)
  • a list of breads/desserts that I need to make for the week
  • the cooking time for each meal (so I can have dinner ready on time to keep the crying children and pecking chickens at bay)
  • a space for notes

I update these menus every season using the notes I've made; what was a hit and what wasn't, what needed to be changed to a different night or took too long, what cost too much $, or what needed more/less to feed us all. Over the years I've been able to save a lot of money on groceries and reduced the amount of wasted food, just because of a menu. It's a work in progress, but one I'm grateful for every day as 4:00 rolls around and I start to get into meal preparation mode.

Why do I need a menu?

  • saves the meal preparation/planning stress
  • saves time wasted trying to decide what to make
  • saves money
  • helps with grocery shopping - I always know what to buy each week
  • helps plan for big cooks (which save you time and money too!)
  • stress causes health problems...a menu planner could really be a life saver!


Did I mention that my menu is my life saver???

Now I look at the menu the night before and take out the meat needed or a pre-frozen meal (from my awesome big cook days) and make sure I have all the ingredients ready - no more staring into the fridge/cupboard trying to decide what to make and finally giving up and ordering pizza. There is very little stress with meal times now...sure the kids still hang on my legs crying for food and attention, but that time has been significantly shortened to the time it takes me to whip a salad up or make a side dish.

Spring Menu



The Crocuses are out at Ladybug's Landing & it's time for a new menu.

I make a menu for each season to help me stay focused each day when it's dinner time. It also really helps with planning, Big Cooks, and shopping! I make a 4 week menu with 5 meals each week (one day left out for leftovers and one day for take-out or a meal with extended family.
